Coming Back

July 28, 2011

I really never meant to be gone from this space for so long. I was just taking a few days to finish up a project, to get everything completed so that I could return to our normal rhythm, but days turned into weeks, and here I am wondering where the time went.

I have been working on a special project that I am excited to share with you in the coming months, and besides the three little ones, it has taken up most of my summer time fun. One of the best parts of the project is that there has been lots and lots of cooking involved, and many recipes developed.

One of our favorites has become a simple herbal popcorn that is fast, easy and perfect for summer movie or star watching. The popcorn can be made with any herb combination that sounds good, and then topped off with a spice/salt blend. It is a bit addicting, and I make a large amount just to have a bit left the next day with my lunch or a snack.

Herbed Popcorn

15 cups of popped popcorn
1/4 cup butter
1 tsp. dried thyme
1 tsp. dried rosemary
Kosher salt

Melt the butter and remove from heat. Add the herbs, salt and pepper and drizzle over the popcorn. Toss gently to incorporate and serve.

I wish you all a beautiful weekend (how is is August already??) and I will be back in this space on Monday.

Hello! Glad to see you back… the popcorn looks great. We've been addicted to nutritional yeast, butter & sea salt popcorn lately. But this recipe has me eyeing the basil plants in the garden 🙂 Happy weekending to you…..

Yay, good to see you back! Herb-y popcorn is sooo good! Had some with basil the other night–yum!

Yes that does happen to us sometimes where real life takes us away from blogland and that usually means lots of things going meant to be shared on posts later. With all that goes on in the summer it's all so easygoing and fun.
Oh the popcorn sounds awesome it's like you read my mind. I was at the store last night and came across some that was already made and I was thinking I'll have to google to see what herbs to mix. Thanks can't wait to try this!

I am so sold. There WILL be herbed popcorn in my future. Yummmmm.

The popcorn sounds delicious! I'm with Stephinie; we usually add nutritional yeast. A lovely summery table you have there. 🙂

I eat popcorn everyday and have for years. I have been on a basil kick and add fresh chopped basil to my popcorn along with nutritional yeast…yum! Glad to hear you are enjoying your summer .xx

It's summer Heather! I totally understand how you can get lost in it and not have time to post! Having three kids, especially a baby is very intense. I'll have to try your popcorn. We're totally into popcorn here too! ♥Kyndale

Summer is so very busy. I'm looking forward to settling into fall. Herbed popcorn sounds yummy! I'll have to try that.

earth mama 101 July 29, 2011 at 12:07 pm

We LOVE herbed popcorn. We had a friend who had a popcorn birthday party and she had all different flavored popcorn, from sweet to savory to spicy. I definitely think it is addicting. I am excited to hear about your project. I have been in food centered projects lately as well, but mine have been for others. Im thinking your project may be your very own. I have found that once I take a blogging break…or just a few days off, it's hard to get back to it. IT's always nice to see you in this space though. Have a wonderful weekend.

I understand the need for a break. I am taking part of The August Break-photos of summer moments with no words.
Have a great weekend!

looks beautiful! the popcorn sounds wonderful- we typically do Braggs raw amino and nutritional yeast on ours, but I think we might have to try the herbed style soon!

Hello again. I'm useless at making homemade popcorn, but your recipe sounds so tempting I may have to give it another go.

Happy holidays,

Welcome Back! I've been chilling myself. Look at your sweet baby holding that mug. Too cute and I just can't get over how much your big boys have grown. They are really "Boys" now. The time has gone too quickly. Enjoy your weekend and that beautiful weather.

ooo….I'm excited to hear about this new project. I have a feeling it will be a great one!
We enjoy herbed popcorn often at our house, as well as my husband's concoction of curry/chili powders, butter and parm cheese. Super yum.
