Yesterday I spent a ton of time sitting with this blog, putting together the new pages, and playing around with new ideas. I think that I am almost where I want to be, and I am finally starting to feel good where everything is going.
I had been given a random box of strawberries last week, and I only say random because living in Colorado, we just rarely ever think about summer fruit in January. They had ripened for a few days, and I found myself needing to eat them ASAP. I have been playing around with some new recipes for making GF biscuits over the past few weeks, so I decided it was a good time to add some toppings to them, just to spice it up a bit.
Biscuits with Strawberry Cream
6 homemade or store bought biscuits (I used gluten free drop biscuits above)
1/2 pint of strawberries washed, hulled, chopped and slightly crushed
Dusting sugar (only if making homemade biscuits)
Honey whip cream (this is simply adding 1 1/2 Tbsp. of honey to your whipping cream, prior to whipping in up)
I prefer to make homemade biscuits, and then serve them warm out of the oven for this recipe.
If making homemade, just prior to placing biscuits in oven, cover with dusting sugar, and bake as usual.
While the biscuits are baking, prepare your strawberries, and your honey whipped cream. Once the whipping cream is finished, gently fold in your crushed strawberries.
Remove your biscuits from the oven. Let cool for 10 minutes, and then top with a big dollop of your strawberry cream. Pour a cup of tea, and enjoy
Biscuits with Softened Apples and Honey Whip Cream
6 homemade or store bought biscuits (I used gluten free drop biscuits above)
2 apples (I use four and then save the apples for pancakes, etc.)
1/4 cup of brown sugar
1/2 stick of butter
Dusting sugar (only if making homemade biscuits)
Honey whip cream (this is simply adding 1 1/2 Tbsp. of honey to your whipping cream, prior to whipping in up)
I prefer to make homemade biscuits, and then serve them warm out of the oven for this recipe.

While you are preparing your biscuits, peel core and slice your apples. Place in a heavy bottom pan (I prefer cast-iron), and saute in your butter and brown sugar in soft and slightly caramelized.
Remove from the heat, place in a separate bowl, and allow to cool for 10-15 minutes
Remove biscuits from over, and allow to cool for ten minutes
Place a few slices of your apples over each biscuit, and top with a huge dollop of honey whipped cream.
Enjoy!

Oh that sounds delightful! Might have to do that once we get closer to Spring. I'd love to do the vintage swap, but I don't think I have or can get my hands on enough vintage goodness yet.
I made biscuits and gravy yesterday but these look divine. I love the idea of adding honey to the whipping cream, it could have taken me years to think of that. 🙂 Thanks, I can't wait to give it try.
I thought from the photo that it was peaches, but apples….even BETTER!!! Honey has been growing on me. I think it has to do with the amount of granola that I've been eating. You're making me wish that my kitchen was in working order and not a shambles so that I could try making these.

you can never go wrong with whipped cream or biscuits in my opinion. I like the idea of using honey instead of sugar to sweeten the whipped cream…will definitely be giving that a try.

And then I'll just have to keep moving on down the stairs to my basement studio to get sewing on a baby quilt and sling for a shower that's this weekend. Maybe baked goods will do the trick to get rid of my headache (yep…) and get me in gear to make use of the time I have to myself right now; it is a rare daytime treat!

Wow, strawberries sound so good right now. Here in Nebraska we are on a fruit shortage in the winters too. I love apples and citrus but sometimes just crave strawberries.
